We still make our sausages the old fashioned way with natural casings hand mixing. Our recipes have been handed down through the years in order to maintain the unique tastes and flavours of years gone by. We mix old and new processes to create a sausage that whets the appetite.
For a number of years we have been working on reducing fat content in our sausages to meet modern tastes. We have upped the stakes and produced a sausage with less than 10% fat while maintaining the usual delicious taste. For the summer season we have produced the “Smokey Dog” – a 21cm long sausage, 112 grams in weight – it’s the quarter pounder of sausages.
